Spicy Egg Pepper Fry / Muttai Milagu Varuval

I never fail to make this egg pepper fry whenever I make biriyani or pulao of any sort.  The main ingredient used here is the pepper -jeera powder. I always have a small box of coarsly ground pepper -  jeera powder (in the ratio 1:2 ). It comes handy when you want to make quick rasam or to spice up an an egg omlette. But if you dont have that you can use the regular pepper and jeera powder seperatly.
This is a very quick and easy recipe and can be made for large crowds without any hustle or bustle :) 


Ingredients:
4 eggs boiled.
2 garlic pods , finely chopped
1/2 tsp fennel seeds powder/ whole fennel seeds (sombhu)
1 tsp pepper powder
2 tsp jeera / cumin powder
1/2 tsp turmeric
1 tsp curry leaves powder or few sprigs of curry leaves.

Method:

Boil the eggs with a little salt for about 10 mins. Remove from the stove, cover the pan with a lid and rest the eggs for 10 mins.

Peel the skin gently and cut into halves. Keep aside.

In a pan take1 tblsp of oil. When the oil is hot add garlic and all the powders. Stir for a minute in medium heat. 
Add salt and 1/4 cup water. When the water starts to boil and reduced a little bit add the eggs , cut side down.


 Cook for 2 mins.Turn them gently and cook till all the water evaporates and masala coats the eggs.

Egg Fry / Muttai Varuval


I have already posted an egg fry recipe using tomato paste. This is another verson of that without using the tomato paste.This is how my mother used to make along with lemon rice during my schooldays. Even now sometimes during vacation I ask my mom to make this simple combo and wind of the cooking as early as possible (which is very hard for her to do), so that we have some time to talk .
But that never happens, because now that she has some extra time in her hands, she starts making preparation for some nice elaborate snacks for the evening...
And when the time comes to leave she would always say " pesa kooda neram illa" - meaning  "didnt get time to talk at all"  : ). Thats how it is everytime...
But I manage to finish up all the chit chat through phone....thanks to the voip technology .
Now coming to the recipe...

Ingredients:
4 eggs
1tsp chilli powder
2 cloves garlic , chopped
few curry leaves/curry leaves powder
salt and oil as per taste

Method.
Hard boil the eggs and make cut into two equal halves.
Add two tsp of oil in a non stick pan.
Add the chopped garlic and curry leaves to the hot oil, stir for a minute.
Reduce the flame to medium and add the chilli powder and salt.
Stir for a minute and add 1/2 cup of water, and let it boil.
Now add the eggs, cut side down and cook till all the water evaporates.
Turn the eggs gently, so that the masala is coated well on all sides.
Serve with any mixed rice.


Cooking from Other Blogs:

Now and then I keep reminding myself that I need to cook up the bookmarked recipes from other blogs. I do that, but mostly they are baking recipes. There was this event which I used to like very much called the "MBP" - Monthly Blog Patrol, which would motivate me to look into other blogs for interesting recipes, with a purpose, instead of just browsing through. Iam not  sure if that event is still going on or it had been stopped. Any Idea !!

This weekend , bored with the usual chicken curry I started looking at my bookmarks and decided to try  Sarah Naveen's " Nadan Chicken roast " from Vazhayila. It was absolutely delicious and the taste was totally different from what we were used to, and that was excatly what I was expecting. Iam glad I tried it and will be making this often.
I followed the recipe as such, except that I added two tsps of tomato paste, to get that colour, as  my tomatoes were very bland, typical for this time of the year.
After Inspired by this recipe , I have decided to check out all the other bookmarked dishes, atleast once in a week. Lets see how it goes.

Carrot egg poriyal and some muffins too

I wanted to post this recipe for a long time but didnt get to it.
Its an interesting recipe from one of my friend back in seattle who got it from his Mom. It tastes so good and liked by all of us that no wonder it used to be a standard dish in his bachelor cooking every now and then and morever this was the only dish that included some vegetables other than sambhar. After moving out of seattle whenever I make this carrot and egg porial I remember those days when we used to cook together and have endless chats and share lots of funny stories.I miss seattle and many friends over there.
Ingredients:
2- 3 large carrots
2 green chillies.
1 medium onion chopped
mustard, uraddhal, curry leaves (optional)for tempering
2 eggs.
Method.
In a wide pan, add 2 tblsp of oil.
Add the tempering ingredients when the oil is hot.
To this add the chopped onion and chillies and sate till the onion becomes translucent.
Now add the grated carrots , salt and stir well.Sprinkle some water, reduce the flame to medium and allow the carrots to cook well.
After 10 mins open the lid and check if the carrots has cooked well and all the water is absorbed.Now move all the carrots to one side of the pan.
Add 2 tsp of oil on the other side and crack the eggs in it.
Allow the eggs to set for some time and then scramble them well.
After its partially ooked mix with the carrots and stir well for few minutes.
Alternately we can also scramble the eggs seperatly and add to the carrots.

Express Breakfast

Egg Scramble with Mixed veggies and mint.


The title says it all. This was our breakfast this sunday.
We had planned to go around brussels this sunday but got up very late to make an elaborate breakfast.Feeding my kid and getting him ready to go out is a huge task nowadays.So just entered the kitchen and chopped up all the left over vegetables (wiped my fridge clean except some tomatoes).I stir fried all the vegetables, added the beaten egges, and scarambled them with salt, pepper and some chopped mint.The mint gave the scramble a fresh taste.A bowl of egg scramble with glass of freshly squeezed orange juice made us kickstart our sunday morning.

I added onions, green chillies, greeen peppers , yellow peppers, mushrooms and some spring onions, and stired them in the same order.You can add any coloured peppers, zucchini, carrots or any vegetables you want.Iam sending this as an entry to the WBB-Expressbreakfast event hosted by Raaga - The singing chef.


BTW I had received an award from 'Vegetable Platter'.She thinks my blog is Yummy.Iam very delighted to post this in my blog
